When phylloxera began tearing through French vineyards in the late 1860s, Spain watched from across the Pyrenees with a mix of alarm and opportunity. When phylloxera crossed the Pyrenees, Spain was not an unsuspecting victim, but a country already entangled in France’s crisis. French vineyards were collapsing, French drinkers were thirsty, and Spanish growers had rushed to fill the void with bulk wine shipped north from ports like Bilbao, Santander, and Tarragona. That early boom softened the initial blow, but it also set Spain up for a brutal fall when the insect finally took hold in its own soils.
Spain’s phylloxera story is a patchwork of early and late impacts. Catalonia and Rioja were hit first, in the 1870s, as the insect moved south from Languedoc and across the border. Vineyards in Terra Alta, Montsant and Penedès began to fail; traditional bush‑trained vines that had fed the French market with robust reds suddenly yellowed and died. In the 1880s and 1890s, the pest advanced into Galicia, Rueda and parts of Castilla y León, uprooting ancient Albariño and Verdejo plantings and tearing through mixed‑crop landscapes where vines had long shared space with olives and cereals. Some regions, particularly parts of Andalusia, were spared until very late, either by geography, isolation or sheer luck.
As France’s vineyards collapsed in the 1860s and 1870s, Spanish growers moved in the opposite direction, northward. They sent grapes and wine to France in enormous quantities, especially from rapidly expanding regions like Rioja, Navarra and Penedès. Between 1860 and 1888, Spain’s grape‑growing area increased by more than forty percent, and the country briefly surpassed France as the world’s leading wine exporter, with France as its biggest client. Spanish growers and merchants learned French expectations for color, body and stability, and some began to adapt their wines accordingly.
Later, as phylloxera spread within Spain, the direction of migration reversed. French winemakers, technicians and nursery operators moved into Spanish regions that were still healthy or just beginning to suffer, bringing with them Bordeaux barrels, cellar design and blending philosophies. Rioja is the clearest example: figures like Luciano Murrieta and Camilo Hurtado de Amézaga, influenced by Bordeaux models, helped transform the region into a hybrid Franco‑Spanish viticultural zone, with long aging in oak, careful racking and a more structured approach to red wine.
The movement of people also carried varieties and ideas. The story of Vega Sicilia in Ribera del Duero is a striking, if slightly earlier, example. In 1864 (five years before phylloxera reached Bordeaux) Don Eloy Lecanda y Chaves, after years of work in Bordeaux, returned to Ribera del Duero, where he planted Bordeaux varieties such as Cabernet Sauvignon and Merlot alongside local grapes, importing both plant material and a French‑inspired vision of fine red wine. Phylloxera was not yet the driver, but the pattern it later amplified was already visible: French varietals and techniques taking root in Spanish soil. After phylloxera, similar imports continued, as Spanish estates sought to emulate Bordeaux and as French consultants recommended varieties they knew well and as their own winemakers returned from France where they could work and learn while their vineyards were replanted. The influence was uneven and not always directly tied to returning Spanish winemakers, but the net effect was clear: France’s varietal and stylistic repertoire became part of Spain’s toolkit.
French techniques also helped catalyze new Spanish styles. The invention of Cava in the Penedès is often dated to the 1870s and 1880s, with Josep Raventós i Fatjó producing the first traditional‑method sparkling wines inspired by his time in Champagne. Phylloxera was part of this story in two ways. First, the collapse of French vineyards created demand for sparkling wine that Spanish producers could help satisfy. Second, when phylloxera later devastated red vineyards in Penedès, growers shifted toward white varieties better suited to sparkling production, reinforcing the region’s new identity. The timing of Raventós’s experiments in the 1870s and the spread of phylloxera into Catalonia in the 1870s and 1880s suggests that economic pressure from the crisis and stylistic inspiration from France worked together to push Penedès toward Cava.
As phylloxera tightened its grip, the transfer of know‑how from France to Spain became more explicit. French influence on Rioja deepened: Bordeaux‑style barrels, gravity‑fed cellars, and blending philosophies emphasizing structure and longevity were adopted by leading bodegas. Spanish nurseries and growers turned to French models for grafting, importing rootstocks and technical advice from across the Pyrenees. The principles developed in France, matching rootstock to soil lime content, drought conditions and desired vigor, were applied in Catalonia’s dry limestone, Rueda’s high‑pH sands and Galicia’s humid slopes. Modern viticulture spread into regions that had previously relied on traditional bush vines and mixed farming, bringing wire trellising, more systematic pruning and a clearer separation between vineyards and other crops.
Replanting decisions were shaped not only by terroir but by market demand, especially French demand. Regions such as Aragón expanded plantings of Garnacha (Grenache), a high‑yielding variety capable of producing the bulk wine France needed during its own collapse. In other areas, growers chose varieties that grafted easily and produced reliably, sometimes at the expense of local diversity. Native grapes suffered. Godello in Galicia, once more widely planted, retreated to a handful of sites and survived largely in obscurity until its late‑20th‑century revival. Monastrell (Mourvèdre), notoriously resistant to grafting, survived on their own rootstock in arid, high-altitude vineyards unfriendly to phylloxera. See Four Spanish Orphans – Bob Loves Wine. Maturana, Cayetana Blanca and other traditional cultivars were marginalized or nearly lost, overshadowed by more commercially attractive varieties. Phylloxera did not single‑handedly erase these grapes, but it created the conditions in which economic survival trumped preservation and Spain’s modern varietal landscape, dominated by Tempranillo, Garnacha and a few key whites, was shaped in the process.
Politics and regulation framed how Spain experienced both the destruction and the recovery. During the Bourbon Restoration and the late 19th century, Spain benefited initially from trade agreements that facilitated wine exports to France, notably the 1877 accord that opened French markets to Spanish wine. This advantage turned sour when France, recovering from phylloxera, raised tariffs sharply in 1892, cutting off a crucial outlet and leaving Spanish growers with surplus production just as their own vineyards were failing. The early 20th century brought further challenges: uneven agricultural policies, limited investment in rural infrastructure and slow, regionally fragmented adoption of grafting and modern techniques.
Later, under Franco, autarkic economic policies deepened the divide between regions that modernized and those that stagnated. Restricted imports, limited access to foreign rootstocks and equipment, and centralized control over agricultural priorities slowed the adoption of advanced viticulture in many areas. Some regions, like Rioja and parts of Catalonia, managed to consolidate their identities and improve quality despite these constraints. Others, particularly bulk‑wine zones, remained trapped in low‑value production for decades. Political choices – trade agreements, tariffs, subsidies and ideological commitments – played a decisive role in determining which Spanish wine regions emerged from the phylloxera era with renewed strength and which were left behind.
Spain’s phylloxera story is thus one of destruction and opportunity intertwined. The country rose on the back of France’s crisis, then fell under the weight of its own. It absorbed French techniques, varieties and ideas, yet struggled with internal politics and uneven modernization. The vineyards that survived and were replanted, often with different grapes, on different rootstocks, under different economic regimes, created the Spain we know today: a patchwork of regions whose identities were forged in the long shadow of a tiny insect.

Pie Franco: Ungrafted Bobal and Monastrell in Spain’s Sandy Sanctuaries
Phylloxera devastated most of mainland Spain, but it never conquered every soil. In regions where vineyards grow on deep, loose, sandy substrates, the insect cannot survive. These rare pockets became natural sanctuaries for pie franco vines: ungrafted plants growing on their original European roots.
Utiel‑Requena hosts one of Europe’s largest concentrations of ungrafted vines outside the Canary Islands. Phylloxera struck the region hard, but it failed to establish itself in sandy zones around La Portera, Las Cuevas, Campo Arcís, La Vega and several high‑altitude terraces near Requena. Here, ancient Bobal vines, often 80–120+ years old, still grow pie franco, producing wines of remarkable depth and authenticity. Producers such as Bodegas Ponce, Mustiguillo and Sentencia bottle limited cuvées from these living relics.
Further south, Monastrell (Mourvèdre) also survives on its own roots in sandy or coastal sites across Alicante, Jumilla, and Yecla. These vineyards endured because phylloxera cannot thrive in the region’s deep alluvial sands and arid, low‑clay soils. Many of these vines are over a century old, producing concentrated, dark, intensely Mediterranean wines that preserve the grape’s pre‑phylloxera character.
These vines survived because phylloxera requires compact, cohesive soils to move and feed. In deep sand, the insect suffocates, cannot form colonies and cannot bridge the gaps between root systems. These conditions created natural refuges where Bobal and Monastrell continue to grow pie franco, untouched by the crisis that reshaped the rest of Europe.
Ungrafted vines offer a rare window into the past. They preserve original root systems, express terroir with unusual purity and connect modern drinkers to Spain’s pre‑phylloxera viticultural heritage. In a country where most vineyards were uprooted and rebuilt, these pockets of Bobal and Monastrell on their own roots are among Spain’s most precious survivors.
If you even dabble in the realm of Old-World wines, you’ve likely heard of phylloxera. You probably know that it was a blight that attacked European vineyards in the second half of the 19th century with devastating consequences. In this, Part I of a four-part article, I’m going to describe phylloxera and how Europe arrived at its détente with the pest. In Parts II-IV, I will describe how phylloxera impacted the wine industries of France, Spain and Italy, respectively, and how that has affected what’s currently in your glass.
Phylloxera is a nearly invisible, sap‑sucking louse native to eastern North America. For millennia it coexisted with American grape species such as Vitis riparia, V. rupestris, and V. berlandieri, which evolved thick, corky root tissues capable of sealing off feeding wounds and preventing lethal infections. European Vitis vinifera (our beloved wine grapes), by contrast, had never encountered the insect and possessed no such defenses. When phylloxera arrived in Europe in the mid‑19th century, it found a continent of vulnerable vines and became the most destructive event in the history of wine. Estimates vary, but between two‑thirds and roughly nine‑tenths of all European vineyards were ultimately destroyed or severely affected. In France alone, about 2.5 million hectares of vines were lost between 1868 and 1900, and production collapsed by more than 70% between 1875 and 1889.
There are several versions of the story of how phylloxera found its way from America to the tender vineyards of Europe. For years I thought some lady from Kent brought back from America some pretty vines for her garden. The version I’ve come to believe is this: Beginning in the late 1850s, European botanists and nurseries imported American vine cuttings to experiment with hybridization and to combat powdery mildew, which had struck earlier. Hidden in the soil and roots of these specimens was phylloxera.
By 1863, the first unexplained vine deaths appeared in the Gard (a department in southern France) and southern Rhône. Growers saw healthy vines one season and collapsing vines the next, with no visible cause. Only in 1868 did a commission led by Jules‑Émile Planchon, Gaston Bazille and Félix Sahut identify the insect. Confirmation came from American entomologist Charles Valentine Riley, who recognized the insect from its native range.
Phylloxera kills vines indirectly. The insect punctures roots and injects saliva that triggers deformities called nodosities and tuberosities. These wounds invite secondary fungal and bacterial infections that girdle the roots, cutting off water and nutrient flow until the vine starves. In American species, the wounds seal; in vinifera, they remain open. Most species of the insect reproduce parthenogenetically (i.e., asexually, without the need for fertilization), enabling explosive population growth. The result was a slow‑motion catastrophe that rolled through Europe: mature vineyards could look normal one season and be functionally dead a few years later.
Once established in the Rhône and Languedoc, phylloxera radiated outward with terrifying efficiency, carried by infected plant material, soil and even on workers’ boots. By the late 1880s, virtually all major French regions had been affected and 40% of its vineyards were entirely replanted on new rootstocks in the decades that followed.
Spain was hit slightly later, but the pattern was similar: early incursions in the northeast, then a march across key regions. Entire villages shifted away from viticulture, turning to cereals or emigration. The crisis also set the stage for later transfers of know‑how and plant material from France, which I’ll explore in Parts II and III.
Italy’s phylloxera story is both parallel and distinct. The pest arrived later than in France and spread unevenly, with some regions affected decades after others. By the time Campania was hit in 1938, the solution was well established, but the region still faced the same wrenching choices about what to replant and which native varieties to preserve, questions I’ll dig into in Part IV.
The solution turned out to be botanical. Planchon’s identification of the insect, Riley’s confirmation of its American origin, and the work of viticulturists such as Léo Laliman and Thomas Volney Munson led to the only lasting solution: grafting Vitis vinifera scions onto resistant American rootstocks. Early grafting attempts failed because rootstock species had to be matched to soil conditions. Rootstock had to show limestone tolerance in southern France and Spain, drought resistance in Mediterranean zones, and vigor and pH tolerance in continental regions. By the 1880s, combinations of V. riparia, V. rupestris, and V. berlandieri proved successful, and Europe began the monumental task of replanting millions of hectares. By the end of the 19th century, grafting had become the standard response, and the reconstitution of Europe’s vineyards was underway.
Nearly every vine you see today in France, Spain and Italy is a vinifera scion perched on American roots. What is less well understood, and what will be the subject of Parts II-IV, is how the continent’s wine map after phylloxera was not simply restored but rebuilt.
I may be America’s last sherry fan. Sherry is an extraordinary wine, deep in tradition and the product of extraordinary effort in the cellar yet virtually ignored in American homes and restaurants alike. Part of the problem is that is widely (and only partially correctly) thought of as a sweet dessert wine. As I pour myself a glass of palo cortado, I invite you to learn a bit about dry sherry, one of my favorite aperitifs. Then I’ll make some recommendations to help you begin your sherry journey.
Sherry is a fortified wine produced from Palomino grapes grown within the boundaries of DO Jerez‑Xérès‑Sherry and aged within the historic Sherry Triangle formed by the cities of Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda. Although sherry encompasses a wide range of styles, this article focuses on dry sherry: the biologically and oxidatively aged wines that reflect the soul of Andalusian viticulture.
The Sherry Triangle
Harvest
The best dry sherry begins in the luminous white albariza soils of Jerez Superior. Albariza is a miraculous soil whose high chalk content allows it to retain winter moisture and sustain vines through the scorching Andalusian summer. It is a miracle without which viticulture would be nearly impossible in this sundrenched southernmost wine region in continental Europe. In the vineyards, when the Palomino Fino grapes reach perfect ripeness (typically in early September) growers harvest them quickly to preserve freshness and avoid oxidation.
Pressing
The harvested grapes are rushed to specialized lagares or pressing houses near the vineyards for pressing. The lagares are designed to handle large volumes of fruit efficiently while maintaining strict separation of juice fractions that will determine the wine’s destiny. The grapes are pressed in three phases, which results in three distinct juice fractions:
Primera yema: the free‑run juice, considered the most delicate and highest quality. It is destined for the lightest, most refined sherries. It represents approximately 65% of the total volume of the pressed juice.
Segunda yema: a slightly more structured press fraction, still suitable for quality dry sherry but with more body. It represents approximately 23% of the total volume of the pressed juice.
Mosto prensa: the harder press wine, richer in phenolics and typically reserved for distillation or non‑premium uses.
Fermentation
The primera and segunda yema are fermented separately, preserving their individual character.
Sherry producers traditionally rely on indigenous yeasts that thrive in the warm, maritime climate. Fermentation occurs in stainless steel or neutral vessels and proceeds to complete dryness, resulting in base wines around 11–12% alcohol. These young wines are then evaluated and classified for their suitability for biological or oxidative aging, which we’ll talk about soon.
First Classification
Once fermentation is complete, the capataz (cellar master) performs the first classification, assessing each wine’s color, clarity, aroma and finesse.
Wines showing exceptional paleness, delicacy and aromatic lift are marked with a vertical slash (/), indicating their suitability for biological aging under flor. These wines will become Fino or Manzanilla, depending on where they mature.
Wines with greater body, depth and structure are marked with an “O”, indicating their destiny as Oloroso, which undergoes oxidative aging.
Fortification
Before aging, the wines are fortified using mitad y mitad, a blend of wine and neutral grape spirit.
Oloroso candidates are fortified to 17% ABV, a strength that prevents flor formation and sets the stage for oxidative development.
Fino/Manzanilla candidates are fortified to 15–15.5% ABV, a level that encourages the growth of flor, the protective veil of yeast essential to biological aging.

Sobretabla and Second Classification
The fortified wines enter a stage called sobretabla, a period of early maturation lasting several months. During sobretabla, the wines begin to show their true character:
Some biologically aged candidates develop a strong, healthy flor and maintain their finesse.
Others show more structure or lose flor vigor, prompting reclassification.
At the second classification, wines are definitively assigned to their long‑term aging pathways, i.e., biological or oxidative.
Aging
Biological Aging: Fino and Manzanilla
Biological aging occurs under a living layer of flor, which protects the wine from oxygen and acetobacter (the bacteria responsible for vinegar production) and metabolizes certain compounds (i.e., alcohol, acid and glycerin), creating hallmark aromas of almond, bread dough, chamomile and sea breeze.
Fino is aged primarily in Jerez or El Puerto de Santa María, where flor is robust but slightly less persistent than in Sanlúcar.
Manzanilla is aged exclusively in Sanlúcar de Barrameda, where cooler, more humid conditions encourage a thicker, more active flor, resulting in an even lighter, more saline profile.
Oxidative Aging: Oloroso, Amontillado and Palo Cortado
Oxidative aging exposes wine to controlled oxygenation in seasoned American oak barrels. Over years, often decades, the wines darken, concentrate and develop complex notes of walnut, toffee, orange peel and spice.
Oloroso is fully oxidative from the start, resulting in a sherry that is powerful, structured and deeply nutty.
Amontillado begins under flor and undergoes complete biological maturation. The flor yeast eventually starves as nutrients run out, or it is killed intentionally by re-fortifying the wine to around 17% ABV. Then the wine finishes aging oxidatively resulting in a sherry that combines the finesse of flor aging with the nutty richness and savory characteristics of oxidation aging.
Palo Cortado is rare, aromatic and silky. It is a bridge between Amontillado and Oloroso. Palo Cortado begins life as a wine marked for biological aging but shows unexpected aromatic depth and structure during sobretabla. It is reclassified, fortified and aged oxidatively. Palo Cortado combines the aromatic elegance of Amontillado with the textural richness of Oloroso.
Recommended Serving Temperatures
Dry sherry is best when served at cooler temperatures, relative to other dry wines. I like to serve Fino/Manzanilla sherries at 43-46° F/6-8° C. Amontillado, Oloroso and Palo Cortado are best at 54-57°F/12-14° C.
A Brief Note on the Solera System
All dry sherries mature in the solera system, a dynamic fractional‑blending method in which younger wines refresh older ones across multiple tiers of barrels. The solera ensures consistency, complexity and a living continuity of style. Because the solera deserves its own deep dive, I’ll explore it fully in a future article.

The sea breeze fades, the air grows drier and the horizon opens into a vast, sun‑baked interior where vineyards appear like brushstrokes across the earth. This is Murcia, one of Spain’s most quietly compelling wine territories, a region defined not by grand estates or centuries‑old fame, but by resilience, tradition and a single grape that has shaped its identity for millennia: Monastrell (Mourvèdre in France, Mataro in other parts of the world).
Across three Denominaciones de Origen – Jumilla, Yecla and Bullas – Monastrell finds three distinct expressions, each shaped by altitude, soil, climate and the people who have tended these vines through droughts, frosts and the long arc of history. Together, these regions form a kind of vinous triangle, each point offering a different perspective on the same Mediterranean soul.
In Jumilla, Monastrell speaks in a deep, resonant voice. The wines are powerful, structured and sun‑drenched, shaped by broad plateaus and a climate of extremes. It is the region that first carried Murcia’s wines onto the world stage, proving that old vines and modern vision could coexist with remarkable results.
In Yecla, the grape becomes more architectural. The wines are precise, balanced and quietly expressive. Limestone soils and slightly cooler nights lend the wines a sense of focus, a tension between richness and restraint that has become the region’s signature.
And in Bullas, high in the green, mountainous northwest, Monastrell takes on a fresher, more aromatic character. Here, altitude gives the wines their identity. Cool nights, terraced vineyards and forest‑ringed valleys confer the wines with a brightness and lift that feel almost alpine.
Three regions, one grape, infinite nuance.
To explore Murcia through its wines is to understand how deeply place matters. How a shift in elevation, a change in soil or a different rhythm of harvest can transform a grape into something new. It is also to witness a region in motion, where tradition and innovation coexist, and where small family growers stand alongside ambitious modern wineries, all united by a shared respect for the land. This trilogy – Jumilla, Yecla, and Bullas – is an invitation to discover Murcia not as a single destination, but as a mosaic of landscapes and stories. Together, they reveal a region whose wines are as honest and expressive as the people who make them and whose future feels as promising as its ancient past.
